Bams Chili

This is a time consuming recipe. I started with a variety of dried peppers, cumin seed, mexican oregano and ground them into a powder.

This is for two pots of chili, one for the hotter folks and one for the milder folks.

Bacon

Once finished, take bacon out and reserved for later


Chopped 3 or 4 onions and fry in the bacon grease until tender.. Add copious amounts of garlic at this point


Remove onions and lightly brown 4 pounds of ground meat, Can be any combination of meats. Then add the onion/garlic mixture back in.



Move the meat to one side and fry a can of tomato paste in the grease for a few minutes. Stir well.



Add two large tablespoons of your dry chile powder. Stir well and cook that for a few minutes.


Add one can of drained Rotel Tomatoes


Add one can of diced drained tomatos


Add two cans of beef broth and the bacon you fried before. Stir well a season to taste.


Bring to a simmer and keep checking for seasoning...Add more chile powder and beef broth if needed.
